Mini French Toast

The other morning I got up to make breakfast and noticed we were out of regular bread.  I noticed we had some leftover bolillo bread from about a week ago when my hubby made bratwurst, so I decided to make some miniature french toast.  I sliced up the bread (each roll sliced into about 6 pieces of bread), and then soaked it in my egg mixture for a few minutes while I heated up the griddle.  The results were even better than I imagined.  Because of the type of bread it was, it held together much better than typical sandwich bread would have.  I will have to remember this bread for the future!  (Looks may be deceiving-this is not a dinner plate, but a saucer.)
